
I am fortunate to have found out about my non-Celiac Gluten intolerance in a time where Gluten Free products are a fad. And let’s call a duck a duck. It’s a fad.
I’ve read article after article, and while people report feeling great after eliminating carbs from their diet, there is no real proof that gluten is what’s causing that unless there’s an actual allergy present.
Trust me, I would love to be able to eat table bread and spaghetti and all of those delicious treats that have become a mainstay of American culture. But they make me sleepy and sick, and my blood says they’re bad for me, so I stay away.
That being said, I found some Gluten Free Pillsbury Cookie Dough in the refrigerated section of the grocer. This was a pivotal moment for me, since one of the things I LOVE is chocolate chip cookies. It cooked well and it was the first time I felt like I wasn’t buying something different from what other people can eat. Between that and the Purdue Simply Smart Lightly Breaded Chicken Tenders, my junk food days are now complete.
